Everyone in the world is on a smoothie and yoga kick since it's January, right? If you're still holding strong on your new year's resolution to eat healthy OR if you like to partake in smoothies, juices and other healthy items year-round, I've got a good one for ya. I'm a fan of adding coconut flakes to all smoothies because a) I love coconut and b) it kind of masks the flavor of potentially bitter ingredients (spinach, kale, etc.) Here's my current favorite morning concoction: a green coconut mango smoothie.
INGREDIENTS:
3 leaves of organic kale
1/2 cup of coconut flakes (don't cheat and get the sugary ones… go raw!)
2 cups of organic mango (1 fresh mango or frozen… whatever you can get organic. My Costco has big bags of organic mango so maybe try looking there!)
1.5 cups of coconut water (or one small, 11 oz carton)
1/2 cup of almond milk (I am obsessed with Califia brand coconut/almond blend because it has no extra sugars, preservatives or weird ingredients but any almond milk will do.)
Throw ingredients in a Vitamix (get one, you won't regret it!) and enjoy.
