Just before I got pregnant, I got really into making these gluten free pancakes from Cookie & Kate. As is often the case in my house, I didn't have a few of the ingredients one day so I winged it and we decided that we liked my variation even better. Then when I had Gram and he started eating solids, I made him these pancakes and he was obsessed. He literally asks for them everyday. The other day I was out of bananas so I tried making regular old flour & sugar pancakes and he wouldn't touch them. I think that's called a parenting win, right? So here's our family favorite, husband and toddler tested & approved recipe.
INGREDIENTS:
1 cup gluten free oats
6 ripe bananas
2 tablespoons coconut oil
1 teaspoon honey
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
INSTRUCTIONS:
Blend oats to a fine flour texture in Vitamix or other strong blender
Add all other ingredients & blend
Heat coconut oil in non-stick pan
Pour mixture into pan in a few small approx 3" pancakes
Flip pancakes when they're a dark golden on the bottom -- they won't get SUPER cooked on the inside but that's fine with us and totally safe since there are no eggs!
Top with honey or maple syrup... I like to spread on a thin coat of almond butter & pour syrup on top!
